Raw Chocolate Cake

A staple on all our Yoga Retreats – our raw chocolate cake is a winner every time!
Simple Raw Chocolate Cake
Base
1 cup walnuts
1 cup dates
Filling
1 cup soaked cashews (overnight)
1/2 cup melted coconut oil
2 heaped tablespoons raw cacao powder
1/4 cup water
Sweetener of your choice: date syrup, honey etc
Food processor/high speed blender
Method
Base
Process walnuts to the consistency of granules. Add dates and process to a doughy texture. Not too much or it becomes oily. Press down into a cake tin, refrigerate
Filling
Process cashews, oil, cacao, sweetener (to taste) and add water slowly until it’s a smooth cream. Pour over base. Refrigerate for minimum of 3 hours.
Tip: adding some melted cacao butter to the filling will make it firmer. For that restaurant finish get creative with presentation, dusting with some powdered cacao, adding little slices of fruit to the plate. Good luck!
